BEEF SHORT RIB TACOS

Beef Short Rib Tacos

INGREDIENTS:
bone in short ribs
Salt and black pepper garlic powder or salt.
2 onion, sliced
1 cut up or sliced red pepper
3 minced garlic
1 quart beef stock
1 quart of your favorite salsa. We use black bean and corn salsa

Remove membrane on underside of ribs
Salt and Pepper all the way around and sear all sides in a skillet or Dutch oven using coconut oil or whatever oil you cook with to sear.
Put a couple tablespoons of sesame seed oil in with beef while searing
Once all the short ribs are seared placed sliced onions, red peppers and garlic in pan and cook down
Place beef back in Dutch oven or slow cooker and cover beef with beef broth and or salsa to deglaze the pan.
A few tablespoons of sesame seed oil and cover and cook in an oven for 3 hrs at 275 or all day with a crock pot
Once the short ribs are fully cooked and bone pulls easy, place a few cups of the liquid from the Dutch oven in a skillet and begin to cook down or reduce
While the liquid is reducing shred beef and put in skillet with liquid and let cook down for a few minutes

Prepare shredded broccoli slaw and put a few splashes of rice vinegar, 2 teaspoons for sesame seed oil and 1 tablespoon of sugar and mix well and put in refrigerator

Place in a hard shell taco topped with the broccoli slaw, topped with shredded cheese I like a little sour cream with mine
